Permafungi, a sustainable partnership, an eco-responsible company

Since 2016, Permafungi has been the exclusive supplier of 100% organic Belgian oyster mushrooms to Notes de mon Jardin.

The freshness and subtlety of their taste have inspired Philippe Debra to create original recipes, such as duxelles or miso leek quiche.

The project of this young Brussels company was born from two observations: the proliferation of urban waste, on the one hand, and the high unemployment rate of young people, on the other. To remedy this, Permafungi was created in 2013, within a Brussels incubator.

The concept is simple and bold: to use coffee grounds to grow mushrooms all year round. Very quickly, the young start-up had to move to the cellars of Tour et Taxis. By 2016, their workshop had grown from 200 m² to 1,000 m².

Supplies are provided through partnerships with fast casual food chains in Brussels, Exki, a longstanding partner, Pain Quotidien and Frabricca. The coffee grounds are collected by bicycle to limit the environmental footprint.

The oyster mushrooms are then cultivated in mushroom houses in a constantly evolving process.

Each month, more than one tonne of oyster mushrooms and 10 tonnes of natural fertiliser are produced. In addition, 5 tons of coffee grounds are recycled! A great example of a circular economy.
Last year, Notes de mon Jardin ordered nearly 750 kg of oyster mushrooms.
