To remedy this, Permafungi was created in 2013, within a Brussels incubator.<\/p><p>The concept is simple and bold: to use coffee grounds to grow mushrooms all year round. Very quickly, the young start-up had to move to the cellars of Tour et Taxis. By 2016, their workshop had grown from 200 m\u00b2 to 1,000 m\u00b2.<\/p><p>Supplies are provided through partnerships with fast casual food chains in Brussels, Exki, a longstanding partner, Pain Quotidien and Frabricca. The coffee grounds are collected by bicycle to limit the environmental footprint.<\/p><p>The oyster mushrooms are then cultivated in mushroom houses in a constantly evolving process.<\/p><p>Each month, more than one tonne of oyster mushrooms and 10 tonnes of natural fertiliser are produced. In addition, 5 tons of coffee grounds are recycled! A great example of a circular economy.<br \/>Last year, Notes de mon Jardin ordered nearly 750 kg of oyster mushrooms.<\/p><p>Like us, do you support this eco-responsible concept and want to know more?
